Basil Tartlets with a Sweet Balsamic Glaze!

Chives

Tartlet Shells:

Pre-made Pie Crust

Filling:

5 oz. Goat Cheese

3 oz. Cream Cheese

2 T. Chives, finely chopped

2 T. Basil, finely chopped

Salt & Pepper to taste

Topping:

Sliced Tomatoes

Julienned Basil

Sweet Balsamic Glaze:

½ c. Balsamic Vinegar

5 t. Brown Sugar

Prep your tartlet shells first. Press pie dough into tartlet mold, line each with foil, then fill with dry rice, beans, or pie weights. Bake at 400 degrees F for 12-15 minutes. Allow to cool completely.

Filling: While shells are baking, mix all ingredients for the filling together and keep in the refrigerator until ready to use. Set out at room temp for a few minutes to soften if needed.

Topping: Lay sliced tomatoes on paper towels while to soak up extra juice. Julienne a small handful of basil and set aside.

Sweet Balsamic Glaze: Simmer the balsamic vinegar and brown sugar in small saucepan for 5-10 minutes, checking often. Remove from heat when mixture coats a spoon.

To assemble, fill each tartlet shell with a layer of the cheese mixture, top with sliced tomatoes and julienned basil, then drizzle them with the balsamic glaze.
